Let's Talk Science

Pairing can be as simple as learning your taste buds and what you like paired together.  Each one of us has different tolerances for bitter, sweet, and sour.  It comes both from our natural hertiage and also what we have had in our lifetime.  For someone that drank tea growing up, may have built up a tolerance to bitter than someone who never drank tea.  

It’s here that we will explore different aspects on the science side.

pH Level Scale

pH ranges from 0, perfectly acidic to 14, perfectly alkaline. Water is a 7, which is neutral. Most foods lean into the acidic but there are exceptions.
